Fresh Herb Buttermilk Ranch Dressing

Makes:
16 servings (2 tablespoons each)

Ingredients
1 1/3 cups low-fat buttermilk
2/3 cup low-fat mayonnaise
2/3 cup low-fat sour cream
1/2 small clove garlic, grated
1/2 cup chopped fresh tender herbs such as basil, cilantro, dill, parsley, chive, tarragon, or mint
sea salt and freshly ground pepper to taste

Directions
In a medium bowl, whisk all of the ingredients together. Allow to marinate for 15 minutes, then serve.


Spicy Avocado Dip with Cilantro and Lime

Makes:
16 servings (2 tablespoons each)

Ingredients
3/4 cup plain fat-free yogurt
1/4 small red onion, small diced
1/4 cup chopped fresh cilantro
jalapeno, seeded and minced
2 tablespoons fresh lime juice
1/2 teaspoon ground cumin
3 ripe peeled avocados, seeded and coarsely chopped
1/2 small clove garlic, minced
sea salt and freshly ground pepper to taste

Directions
In a food processor, blend all of the ingredients until smooth. Transfer to a small serving bowl and serve immediately.


Tangy Blue Cheese Vinaigrette

Makes:
16 servings (2 tablespoons each)

Ingredients
1/2 cup white wine vinegar
2 tablespoons Dijon mustard
pinch of stevia
1 1/2 cups olive oil
sea salt and freshly ground pepper to taste

Directions
In a medium bowl, whisk all of the ingredients together. Allow to marinate for 15 minutes, then serve.
