Eggs

Egg and Vegetable Scramble

Makes:
One Serving

Nutrition per serving:
Calories = 42, Fat = .4g, Carbs = 6g, Protein = 16g

Ingredients
4 egg whites, beaten
1/2 cup baby spinach
4 cherry tomatoes, sliced
3 button mushrooms, sliced

Directions
Place egg whites and all vegetables in a medium bowl. Stir together.

Heat a small, high quality nonstick pan over medium heat. Once it gets hot, turn it down to low and add the egg mixture. Allow to cook until egg whites start to lift up from the pan. Don't try to remove from the pan too soon. Once eggs are cooked, slide onto a plate and serve.
