Orange-Mint Crush

Makes:
Eight to ten 6 oz servings

Ingredients
1 quart fresh orange juice
1/2 cup mint leaves
2 oranges, peeled and chopped
1 bottle bubbly mineral water

Directions
Fill the slots of an ice cube tray with the chopped oranges and mint leaves. Fill with the orange juice and freeze. When completely frozen, put two orange ice cubes in a blender and add 1/2 cup mineral water and pulse until blended.


Baked Orange Meringue

Makes:
Two servings

Ingredients
2 large egg whites
⅛ tsp cream of tartar
2 tsp stevia (4 packets or 16—24 drops)
1 Tbls orange zest
2 oranges, peeled and segmented

Directions
Preheat oven to 350F. In a glass or metal bowl, beat the egg whites until foamy. Add the stevia and cream of tartar and beat until peaks are stiff. Lay the orange segments pin-wheel fashion in a small baking dish or ramekin (an oven-proof soup bowl would also work). Mound the meringue on top of the oranges all the way to the edge of the baking dish and bake until the peaks are golden brown, about 15 minutes. Garnish with the orange zest. Makes two portions.


Strawberry and Basil Salad

Makes:
One serving

Ingredients
1 cup strawberries
1 Tbls finely shredded basil leaves
1 tsp sugar-free balsamic vinegar (see Pantry recipes)
1 tsp Dessert Spice Blend (see Pantry recipes)

Directions
Wash and halve the strawberries, and toss with the basil. Arrange in a shallow bowl, and drizzle a very small amount of vinegar over the top. Eat at once.


Strawberry Freezee

Makes:
One serving

Ingredients
1/2 cup of strawberries
* 1/2 tsp of lime juice
stevia to taste
ground black pepper
water

Directions
This is excellent for a summertime treat. When partially frozen and remixed it resembles a sorbet desert. A bit of ground black pepper goes well with the strawberries.


Mint-Apple Granita

Makes:
One serving

Nutrition per serving:
Calories = 116; Fat = 0 g; Carbs = 32 g; Protein = 1 g

Ingredients
1 large sweet red eating apple, peeled, cored, and chopped
juice of half a lemon
5 Tbls water
1 Tbls finely shredded mint leaves
stevia

Directions
In a blender or food processor, combine apple, lemon juice, water and mint. Pulse until blended, and add stevia to sweeten to taste, if desired. Pour liquid into a small plastic container and freeze until firm. When firm, remove from freezer and scrape with a fork or spoon to create crystals. Return to freezer for half an hour to set, and then scrape again. Serve immediately.


Apple Delight

Makes:
One serving

Ingredients
1 red sweet apple
cinnamon or Dessert Spice Blend (see Pantry recipes)
water

Directions
Cut apple in half and remove core. Cut one half of the apple into chunks and puree it with some of the water. Cut the other half of the apple into little cubes and place them on a small plate. Pour the apple puree over the cubes, sprinkle with cinnamon.


Grapefruit Delight

Makes:
One serving

Nutrition per serving:
Calories = 45; Fat = 0 g; Carbs = 16 g; Protein = 1 g

Ingredients
1/2 of a medium grapefruit
2 fresh stevia leaves
2 lettuce leaves
1/2 tsp cinnamon or Dessert Spice Blend (see Pantry recipes)

Directions
Place lettuce leaves on a small plate. Carefully slice off the bottom of grapefruit so it can sit flat on the lettuce leaves. Sprinkle with Dessert Spice Blend. Finely chop stevia leaves and sprinkle on top.
