Sweet and Spicy Roasted Walnuts

Makes:
8 servings

Calories = 89; Total Fat = 9 g; Cholesterol = 1 mg; Sodium = 443 mg; Carbohydrate = 1 g; Fiber = 2 g; Protein = 7 g

Ingredients
1 egg white
1/2 teaspoon stevia
1 teaspoon ground cinnamon
1/4 teaspoon cayenne
2 cups whole raw walnuts
sea salt and freshly ground pepper to taste

Directions
Preheat the oven to 300F.

Line a baking sheet with aluminum foil and lightly grease with oil. In a large bowl, whisk together the egg white, stevia, cinnamon, cayenne, salt, and pepper. Add the walnuts and toss to combine. Transfer the nuts to the baking sheet with a slotted spoon. Bake the nuts until they become crisp and fragrant, about 20 minutes. Allow to cool thoroughly, then serve.
