Healthy Recipes (Vol 3)

Chicken

Asian Style Chicken

Makes:
One serving

Nutrition per serving:
Calories = 141; Fat = 1 g; Carbs = 6 g; Protein = 25 g

Ingredients
3 1/2 ounces chicken breast
1/2 cup mushrooms
1/2 Tbls lime juice
salt and pepper to taste
1/4 tsp mustard powder
pinch cayenne pepper
1 Tbls parsley
1/4 tsp onion powder
1/4 tsp curry powder

Directions
Add sliced mushrooms to a pan. Add in 1/4 cup of water and allow them to cook until tender. If desired, add lime juice. Drain, and place into a bowl. Cut chicken into small strips (about an inch) and put into frying pan. Season with salt and pepper. When chicken starts to brown, add mustard powder, cayenne pepper, curry powder and onion powder. When chicken is ready, add to bowl with mushrooms and squeeze lime juice on top and add parsley. Mix together.


Citrus Chicken

Makes:
One serving

Calories = 189; Fat = 1 g; Carbs = 23 g; Protein = 24 g

Ingredients
1 small orange
3 1/2 ounces chicken breast
lemon juice
1 teaspoon of salt
1/2 teaspoon of pepper
1/4 tsp minced ginger

Directions
Allow chicken breast to marinate for 10 minutes in a mixture of lemon juice, salt and pepper. Peel the orange, cut into small cubes. Saute all together, adding ginger and a little more lemon or lime juice to mixture. Cook until chicken is cooked through.
